A Thai meal is an exercise in balance. Several dishes arrive together and are eaten with rice. Meals very rarely repeat dishes or tastes, so planning, shopping and storage are key.
Meet in the celebrated Thai restaurant SABA in Clarendon Street where Executive Chef Tao will greet us with a bowl of conchi, a traditional Thai breakfast. A skilled and experienced chef, he will demonstrate dishes, discuss useful techniques and explain how the ingredients are used not only in these recipes but in other dishes too. As he demonstrates, we taste!
Off then to a specialist Asian Market where Tao will show us how to search out top class Thai ingredients, pointing out the familiar as well as those less familiar foods. Around the corner to the local Irish shop, we learn what ingredients we can substitute to keep that true Thai taste when we can't access the real thing.
Back at SABA over a delicious lunch accompanied by wine or beer Tao will give recipes for all we tasted and a mini dictionary of the essential Thai ingredients to take home.
